Can I update posts I created by hand?
Not directly for posts: Content Uploader only recognises items it published itself. WooCommerce products are the exception: they are found by their SKU.

Not directly. Content Uploader matches rows only against items it published itself, to the same site and content type. A post that was written by hand, or published with another tool, is not matched by ID, slug or title, so a row with the same title creates a new item beside it.
To bring such content under Content Uploader's control, publish it from a spreadsheet first and tidy up the old copy by hand afterwards. Try the first import on a staging copy of your site.
WooCommerce products are different. A row whose SKU belongs to a product the shop already has can update that product, after a review that lists only what differs: update products already on your shop.
Choosing the record ID and the migration tutorial show how.
